Wednesday Pizza

I made pizza yesterday.

First, I mixed up and kneaded the dough.  Then, while it was rising in the microwave (it was off, of course), I went for a walk/jog.  After I returned and took a shower, it was time to punch it down, preheat the oven and pizza stone, and start making the toppings.  Here's how it went down:

Roll or press dough into desired size/shape.  Roll up the edge to make a crust.
Spread on the sauce (mine is unseasoned).
Add Italian spices, shredded mozzarella cheese, caramelized onions, fried mushrooms, and garlic.
Shred some more cheese and put it on, because cheese is good.  Brush the crust with olive oil, then sprinkle with garlic salt and some more Italian seasonings.
Very, very carefully, transfer from table to pizza stone in the oven.  I used parchment paper to do this, as I don't have a pizza peel.  Try not to burn yourself on the oven or the racks.

Discover that you should have measured the pizza stone-- your pizza has too great of a diameter.  Decide not to care.

It barely fits inside the largest (16") circle.  Partly because it seems the crust unrolled itself.

Aha, a cooling rack!
Cut a slice and enjoy!
